RECIPE | Gingerbread Cookies

Gingerbread cookies are really not considered Spring baking but the Bath and Body Works gingerbread scented hand wash made me crave some. 

Ingredients:

1 1/2 cups of all purpose flour

3/4 cups whole wheat flour

3/4 cup white sugar

1/4 cup molasses

3/4 cup butter

1 egg

1 tablespoon fresh squeeze orange juice

1/2 teaspoon ground cloves

1/4 teaspoon salt

1/2 teaspoon cinnamon

2 teaspoons fresh ground ginger

1 teaspoon baking soda

2 tablespoons white sugar (to use later)

Directions: 

In a separate bowl, combine the flour, salt, baking soda, ground cloves, cinnamon and ginger together.

In a mixing bowl, cream together the butter and the sugar. Tip: It’s much easier to cream the butter when it’s softened and it create a smoother blend when you are finished. 

Beat in the egg until it’s evenly mixed with the with the sugar and butter.

Add the molasses and orange juice into the mix.

Mix the molasses with the butter mixture until combined with a spatula.

Slowly add in the flour, a little bit at a time and continue to mix with the spatula.

My dough turned out structured but if yours turns out more like a liquid then set aside for 40 minutes or so until it becomes stiffer.

Roll the dough into little balls (the size depends on how big you want the cookie to be) This recipe yields around 24 cookies and the balls were a bit smaller than a ping pong ball. Roll the balls in the white sugar until they are fully coated like the picture below.

Find a circle object to press the dough flat onto your baking sheet. Tip: I used the bottom of a measuring cup but if you don’t have that, you can always use the bottom of a glass jar. 

Bake in the oven at 350 degrees farenheit for about 15 minutes. Let them cool and enjoy your cookies!

I’m a huge chocolate fan so I try to incorporate chocolate into all the baking I do. I used less sugar in this recipe because some people don’t like sweets. If you need to cater to the sweets loving group, add some chocolate chips in before you bake them!
